A pitaya matcha latte is a visually striking and flavorful drink that combines the vibrant pink hues of pitaya (dragon fruit) with the earthy green tones of matcha green tea. This unique fusion results in a perfect balance of sweet and slightly tangy flavors from the pitaya, and the rich umami undertones of the matcha.
Ingredients

¼ cup pitaya (dragon fruit) puree

1 teaspoon matcha powder

½ cup milk (dairy or non-dairy)

¼ cup hot water

Sweetener of your choice (e.g., honey, sugar, agave syrup), to taste

Optional toppings: whipped cream, sliced pitaya, shredded coconut
Directions
In a bowl, whisk the matcha powder with hot water using a matcha whisk or a small whisk until it's well combined and frothy. This will ensure there are no clumps.
In a blender, blend the pitaya puree until smooth. You can use fresh or frozen pitaya puree. If using frozen pitaya, make sure it's thawed before blending. If you'd like a sweeter latte, you can add sweetener to the pitaya puree.
Add Ice & Pitaya to Serving Cup
Slowly pour the milk over the ube layer in the cup.
Gently pour the prepared matcha over the pitaya puree and ice in the cup. The matcha should sit on top of the pitaya layer.
Use a spoon to gently stir the layers together before sipping. The colors should blend beautifully to create a visually striking drink.
